Thick white cabbage soup with horseradish

Ingredients

white cabbage 700gr
leek 100gr
vegetable broth 500 ml
potatoes 1 PC.
grated horseradish 1-2 tsp
salt taste
rast. oil 1 tbsp. l.

Cooking method

  • Wash the cabbage, remove the top leaves and stump. Chop the onion and cabbage and stew, stirring occasionally, covered with vegetable oil for 10 minutes. Season with salt, broth, add chopped potatoes and cook for another 20 minutes over low heat. Then grind the vegetables with a blender and add horseradish. Those who do not fast can add 100-150 grams of heavy cream at this stage. Bring the soup to a boil again.

Note

I almost always have vegetable broth frozen in the refrigerator. To do this, I boil a very different set of vegetables for an hour - carrots, onions, celery (root and stem), rutabagas, turnips, bell peppers, parsley root. 5-10 minutes before the end I add dry herbs and spices (lavrushka, dill, hops-suneli, etc.). After cooling, the broth without vegetables is poured into storage containers and sent to the freezer.

Sometimes I replace ordinary cabbage with other types (Brussels sprouts, cauliflower, broccoli), sometimes I add grated carrots.
And I'm making the process a little bit too much, because I don't like the potatoes after the blender.
That is, I cook the cabbage separately, then I blender, and then I combine everything together.
Serve with sour cream.
