Wheat wheat-rye bread with onions in the oven

Ingredients

Wheat flour 210 g
Peeled rye flour 150 g
Mixture 50 g
Powdered milk 1 tbsp. l with a slide
Salt 1.5 tsp
Sugar 1 tbsp. l
Dry yeast (I have 1.5 tsp.
Dried onions 4 tbsp. l. with a slide
Gluten (Panifarin) 1-1.5 tbsp. l.
Serum 290-300 ml (depending on the dryness of the flour)
Flussiksauer (quite replaceable with apple cider vinegar) 0.5 tsp
Vegetable oil 2 tsp

Cooking method

  • Warm the whey from the refrigerator to a temperature of 40-45C and pour it over the dried onions, leave to swell.
  • I have HP "Panasonic", so the order of adding ingredients is as follows: yeast, flour and Borodino mixture, salt, sugar, milk powder, gluten.
  • When the onion is well swollen, add vegetable oil, flux sauer, mix and add HP to the bucket.
  • Turn the oven on to the "Pizza" mode for a full cycle. Then, with greased hands, take the dough piece out of the bucket, shape the bread piece of the desired shape, let it stand for 1 hour and 10 minutes. I distribute in a basket, floured and covered with plastic, in the oven with the light on.
  • After the time has elapsed, I take out the workpiece, turn it over onto baking paper, brush away the excess flour with a brush and make cuts with a blade. In the meantime, I turn on the oven at 200C until it warms up completely. I heat the saucepan in which the bread is baked together with the oven. This takes approximately 20 minutes.
  • Then I put my bread together with baking paper in a hot pot, cover it with a lid and put it in the oven. I lower the temperature to 175C. After 15 minutes, I remove the lid and leave the bread at this temperature for another 20-25 minutes.
  • The result is always excellent
  • I grease the baked bread with vegetable oil and put it to ripen on the wire rack.

But I still follow the bun ... Because flour, even at different times of the year, has different humidity and absorbs liquid in different ways
Flussiksauer is completely replaced by apple cider vinegar at the same dosage
The Borodino mixture gives an excellent aroma, but if it is not there, then I increase the amount of wheat flour and add ground coriander in the amount of 1-1.5 tbsp. l
