Ingredients

Beer dark 150 ml
Fresh yeast 9 g
boiled potatoes grated on a fine grater-169 gr and an apple-95 gr = 264 gr
Molasses (honey) 1 table. the spoon
Wheat malt 1 tea the spoon
Salt 1 tea the spoon
Bio malt coffee 1 tea the spoon
Vegetable oil 3 table. spoons
Instant Oatmeal 3 table. spoons
Spelled flour (regular white) 170 g
Whole grain wheat flour 150 g
Whole grain rye flour 150 g

Cooking method

  • Boil potatoes in a "uniform", peel, grate warm with a fine grater. Peel the apple, remove the core, grate on a fine grater.
  • Crumble yeast into a bucket of HP, add salt, add oil, molasses, add potatoes and an apple, add rye flour and turn on the kneading for 1-2 minutes. Then add the rest of the ingredients.
  • Program "dough" (heating for 22 minutes, kneading, 1 hour rise).
  • The gingerbread man is beautifully shaped, but sticky.
  • Put the finished dough in a mold, pierce it often with a wooden skewer and put it in the oven at T 30 °. When the dough has doubled in size, sprinkle it with water and turn on the heat (the dough remains in the oven) at 200 °. Bake for 45 minutes.
  • 15 minutes - 200 °, 15 minutes - 180 °, 15 minutes - 160 °.
  • It is clear that it is difficult to pick up potatoes and apples exactly according to the indicated weight. We focus on the weight of 300 grams and adjust the bun.
  • I am sure that this bread can be baked completely in HP. I bake similar breads in the "basic" mode - 3 hours 50 minutes.
  • That's how you have to get out when there is nowhere to get rye malt.
  • The bread turned out to be 30 cm long and 14 cm high, weight 878 g.
  • The structure is extraordinary !!!! Soft, airy, springy, full of holes !!!

The bread is very appetizing, and I wanted to bake it myself, but I just started reading the ingredients and, I don't know what it is and where to get it:
beet molasses, wheat malt and organic malt coffee.
I have rye malt, can I replace all this with it?
