Candied watermelon peels

Ingredients

Watermelon rind 1 kg
Sugar 1.2KG
Water 750 ml
Lemon 2 pcs

Cooking method

  • Cut off the outer green rind from the watermelon rind.
  • Rinse the peeled crusts well.
  • Cut the white pulp into small cubes or strips.
  • Put the crusts in a saucepan, cover with cold water and bring to a boil.
  • After boiling, cook for ~ 10 minutes, periodically removing the foam.
  • Place the crusts in a colander to drain off the liquid.
  • Prepare syrup:
  • Pour sugar into a saucepan, pour water, stir and bring the syrup to a boil.
  • Transfer the peels to the finished sugar syrup, add the lemon peels, mix, level the surface and leave to stand until completely cooled, i.e. 8-12 hours.
  • Put the crusts on the fire again, bring to a boil, reduce heat and cook for ~ 15 minutes. Turn off and also leave to stand.
  • The boiling and cooling procedure must be repeated 8-10 times. Somewhere in the middle, squeeze the juice of 2 limes into the syrup. The candied fruit should become transparent and the syrup should boil down.
  • Dried in an electric dryer.
  • For myself, I concluded that you need to cut the crusts smaller. Delicious.

But the presence of watermelon peels led me to the appropriate mood. And again I succumbed to this boring business. Now this recipe.
Everything went normally. Up to this day. At the eighth (two a day) boiling session, I was distracted by too much on a computer, which suddenly went crazy.
Well, you can't do two things at the same time. So I missed the moment when it was necessary to stir the crusts. It seems that here they are a bit burnt to the bottom. ...
Tomorrow for the last time, probably, I will now warm them up in a water bath. To drain the remaining syrup from candied fruits. Well, then into the dryer. Although a bit burnt in the taste of the syrup is already felt.

And what plans were there! Candied fruits for the grandson for storage, on the leftover syrup in the LL ice cream maker, flavor the mixture ...

We dry the candied fruits and try them, for softness, when I made them very dry, they turned out like candy.
