Pumpkin pancakes

Ingredients

pumpkin 400 g
eggs 3 pcs
sugar 4 tbsp. l.
salt (to taste) 0.5 tsp
soda 0.5 tsp
flour 100-150 gr

Cooking method

  • Peel the pumpkin and grate it on a coarse grater.
  • Pumpkin pancakes
  • Add eggs, salt, sugar and stir with a fork. Add flour with soda in small portions, stir until lumps break. You should get something like thick sour cream.
  • Fry in vegetable oil.
  • It is preferable to serve warm, with sour cream, honey, jam - as you like

Outside the window -10, snow, ice, you can't stick your nose out into the street ... And in the kitchen, under the table, a pumpkin took shelter. I fry pancakes, poured buckwheat honey, freshly brewed tea ... In general, everyone has winter, but I have SUMMER !!!

Fugasca, thank you. I baked almost the same pancakes. Almost, because without changes we cannot.
Grated pumpkin turned out to be 530g. Added another egg. It seemed all the same thick, added two more spoons of sour cream, then pancake flour took 4 tablespoons with a good slide. And then I divided the mixture in half. In one half I added my favorite seasoning to dumplings, and in the other honey and a little vanilla. ....... And the rest is exactly according to the recipe ...

I was afraid that my son would reject pumpkin pancakes ... she was fussy ... but my son just approved both options, sweet and savory. With sour cream at .... mmmm ...
