Homemade cheese

Ingredients:

Cottage cheese 600g.
Pasteurized milk 0.5l.
Butter (I make myself from homemade sour cream) 50g.
Egg yolk 1 PC.
Baking soda 1h l. (I do not know why and whether it is possible without it)
Salt 1 \ 2h. l.

Cooking method

  • In the evening:

  • Pour milk into a milk cooker. After the whistle, reduce heat and simmer for 10-15 minutes. Add cottage cheese and mix well so that there are no lumps. Close the lid, increase the heat. After the whistle, reduce the heat, after 10 minutes the whey should separate. The first time I was picking with a spoon - I checked. The second time I didn't touch anything, I just took it off the fire and dumped everything into a drushlag, covered with several layers of gauze. Leave overnight to glass all the serum.


  • In the morning:

  • Melt butter, cool. Beat with yolk, baking soda, salt. Mix with curd mass (I mixed it right in the milk cooker). Put on fire. Reduce heat after the whistle. Cook for 10-15 minutes. The first time I stirred it periodically - the consistency of the cheese was more dense. The second time I mixed it once only after the expiration of time - the cheese was more tender. Grease the form with butter. Transfer the hot cheese to a mold. Cool down. Spread on bread and eat! Bon Appetit!


This is the second time I make it to order. Honestly, I don't know what homemade cheese should taste like (I haven't bought it for a hundred years), but this one is simply delicious !!! Soft, airy and delicate. And even for bread "wheat on dough from the old dough from Admin" !!! Mmmmm. This is how we had dinner !!!

But my mother said that homemade cheese is sold in jars, like sour cream and has just such a consistency. My husband replied to this, I do not know what it is called, but I want it to be always for breakfast!
In the recipe (cut from some magazine) it was called cheese. Maybe if you cook it on gas it will be completely different in consistency.

I have not tried this recipe, but in the same milk cooker I make a simplified version: heat the milk in the milk cooker until the whistle appears, cool the milk and add 1 tablespoon of sour cream with a mountain (any sour cream, more often 15% of my store goes).

I remember that there was a negative experience, that is, the cheese is normal, tasty, but the consistency of melted cottage cheese with grains. In my opinion, then I made a conclusion for myself that such a product is obtained due to poorly squeezed cottage cheese - a large amount of whey obviously brewed the cottage cheese and he did not want to melt. I loved melted, rubbery, so I considered such cheese a marriage, although it was eaten no worse than properly cooked.
