2 kg pork (ham or neck)
0.5 l of kefir
6-8 pieces of onions
1 tbsp tandoori or kebab spice mix
2 pcs very ripe or 4 pcs

  • Perhaps this is one of the most beloved dishes by all. There are tons of different marinade recipes and methods for preparing this endlessly delicious meat.

  • I use kiwi when there is no time for a full marinade (5-6 hours), but I need to keep within 2-3 hours or there is no confidence in the quality (softness) of the meat.
  • We mix the marinade and shashlik with our hands - the meat must be felt.

  • Cut the onion into half rings and squeeze and mash very well so that the juice appears, pour in the kefir, add the tandoori and mix everything. Cut the kiwi in half, take out the pulp with a teaspoon, crush it with your hands until puree and add to the marinade.

  • Cut the meat into strips 3-4 x 3-4 cm along the grain, then across it 2-3 cm thick. Put the meat in the marinade and mix. Then we will stir every 30 minutes until the moment of cooking, so that the meat is evenly marinated, and the kiwi does not corrode it. Cover the bowl with a shish kebab with a plate or a lid and leave it at room T. If it is very hot, we find the coolest place in the house or shade outside. You can put it in the refrigerator for a short time after 1 hour. Since we marinate in kefir, it needs warmth.
