In order for the jam to be thick, you need to add pectin. Although, they still advise lemon juice, but this number did not work for me, that is, from the addition of juice, the jam did not become thicker (only sour). Pectin in its pure form, I could not find, but I got "Zhelfix" (the same pectin + citric acid + something else, I can't remember). Now I cook with "Zhelfix" - there is a spoon in the jam, I checked.
