Eggplant paste with sesame seeds

Bake 2 large ripe eggplants in the oven, put in a plastic bag, let sit for a few minutes. Remove the skin from the eggplant and put in a colander or sieve to drain the juice.
Slightly wait a tablespoon of sesame seeds in a dry frying pan, cool, grind in a coffee grinder and dilute with cold boiled water to a liquid slurry (you can, of course, use ready-made tahini paste).
Put the eggplants in a bowl, salt, add sesame gruel, juice of one lime or lemon juice to taste, 1-2 cloves of chopped garlic and chop everything together with a blender.
For color, you can add a little adjika, ketchup or paprika paste.
Sprinkle with hot pepper (optional) and drizzle lightly with olive oil.
Serve with fresh vegetables and fresh flatbread.
A great alternative to eggplant caviar, very tasty and unusual!
