Roast with prunes

Soak prunes in boiled water at room temperature in advance.
Cut the beef into large enough pieces and fry in vegetable oil until golden brown. Add diced onion and coarsely grated carrots to the meat. Fry until golden brown. Add 2-3 tablespoons of tomato paste. Simmer until the butter turns red. Pepper, salt.
Strain the water in which the prunes were soaked and pour into the cauldron. Simmer over low heat until meat is tender.
30 minutes before being ready, add potatoes (if there is not enough liquid left in the cauldron, pour in hot water), cut into slices and pitted prunes.
Add chopped garlic and herbs (optional) before turning off.
You can stew roasts in the oven.
